The Food Communications & Publishing program offers an exciting window to the food publishing sector. Students are introduced to the different areas involved in food-based publications ranging from writing, styling, photography, and graphic arts.
This is an entirely new market niche for food lovers who are interested in communicating with and through food in the printed form. The Apicius program opens many doors to dynamic fields such as: food editing, restaurant reviewing, writing for gastronomic publications, styling and photography for publications and media and many more.
Continuing students have the opportunity to participate in the publication of a professional hardcover book covering a gastronomic topic. This unique project involves all aspects of bookmaking from researching materials, editing, photography, to book layout and graphics.

The Cookbook Project replaces the internship/apprenticeship course for this program. It consists of a semester apprenticeship in which students will research and contribute materials to an Apicius hardcover book project.
