This Apicius (AISH) program offers students the possibility of enrolling for a single semester or completing a full year certificate.
Beginning level programs are offered in both fall and spring semesters. Advanced programs are offered once a year; spring semester only.
Students who wish to enroll in the advanced level should send a detailed curriculum vitae (resume) along with their application.
A wine expert is a qualified critic, salesman, and business manager. The professional sommelier possesses skills and knowledge on the subject of wine and acknowledges the fundamental importance of wine to the culinary experience. The last 40 years have witnessed a substantial increase in career opportunities for professional wine experts in the wine profession: as sommeliers in the restaurant dining room, as chefs in the professional kitchen, as educators and writers, as winery representatives and winemakers, and as wine managers.
The Apicius professional Wine Studies & Enology curriculum is rigorous and offers students a wide range of future employment in the wine industry. AISH is proudly partnered with Internationally respected wine producers such as Frescobaldi, Antinori, Guicciardini Strozzi and Cantine Leonardo da Vinci, Berlucchi and Distillerie Nardini.

* These courses are a combination of lectures and educational fieldtrips to wineries including the following: Querciabella, Marchesi Frescobaldi at Castello di Nipozzano, Rocca Bernarda, Tenuta La Novella, Torre Fornello, Distillerie Nardini, Prunotto, Marchesi Antinori, Montevertine, Loacker biodynamic wines, and Berlucchi. The fall program includes a hands-on grape harvesting workshop.
** This is an intensive 1 month language course that will be held at the beginning of the semester
